Specialty wine at Walker Hall Winery includes Sparkling wine and Icewine. Although known for world class, consistent Icewine, the Niagara Peninsula is quickly becoming known for its high quality sparkling wines. The W sparkling cuvee is produced in the traditional method and serves as one of the only Pinot Blanc sparkling wines in Niagara.

Icewine is the result of Canada’s magical winters. Although Icewine was invented in Germany, Canada has perfected the process of creating this highly sought after dessert wine.

Natural Icewines require a hard freeze (by law in Canada -8 C (17 F). At Walker Hall Winery -10 C (14F) is the requirement for all Icewines. What this all means is that grapes hang on the vine for several months following the normal harvest in the autumn, allowing the sugars to fully develop until the frozen grapes are finally harvested when the -10C (14F) temperature arrives. In the end, achieving a luscious nectar, smooth, sweet and full of elegance.
