Reserve Line

The Quintessence Reserve wines of which there are two; red and white, are meant to be the perfect expression of the Niagara Terroir. The Quintessence name derives from Aristotle’s aether in the system of the classical elements. In Ionic philosophy, the "fifth element" (the quintessence) is regarded as that which is the region above earth, the celestial regions, the heavenly body. The Quintessence is a wine that according to Chief Enologist Dr. Friderick Vodopivec, must be:
“the perfect expression of the Niagara terroir, a wine that sees no compromise, that is produced and delivered using only the best grapes, processing equipment, and barriques that the world can offer us”.
Quintessensce White

Quintessensce White

Walker Hall’s Flagship White. 2008 proved an exceptional vintage despite the unusual amount of precipitation throughout the summer months. Budbreak was late due to a cold late winter and the weather then turned cool and rainy, delaying vine development further. Atypically cool temperatures continued throughout the summer, further slowing the ripening process and extending the harvest season, which finally reached fruition with an Indian summer of sorts in late September and October.

The Quintessence White will be released in July of 2010. Available for sale on a futures basis, enthusiasts should expect delivery of the wine in the first week of July 2010.
Quintessence Red

Quintessence Red

Quintessence Red Reserve is Walker Hall’s finest Red wine. The wine is meant to be a Merlot based blend but 2008 proved to be an exceptional year for Cabernet Sauvignon and so it makes up just over half of this auspicious blend. As a Bordeaux style blend the 2008 Red Reserve is one that shows great traditional elegance and balance.

The Quintessence Red will be released in July of 2010. Available for sale on a futures basis, enthusiasts should expect delivery of the wine in the first week of July 2010.
Viognier

Viognier

Exotic and rare the Viognier is a labor of love. One of the most difficult of Varietals to grow in Niagara or anywhere for that matter. Walker Hall’s Viognier is located on one of the most suitable locations in terms of terroir and micro-climate in the Peninsula along the shores of Lake Ontario. First and foremost there is the Viognier’s lively perfume, it displays classic aromas of peach, apricot and light orange blossom. On the palette the Viognier shows citrus, white grapefruit and yellow peach flavors followed by a creamy texture in the middle with a bright citrus finish. 2008 Viognier contains floral compounds (called terpens) that are also found in Muscat and Riesling – the reason for the incredibly interesting aromatic explosion. Viognier an excellent complement to Mediterranean cuisine, particularly shellfish, seafood and poultry dishes
